 Beginner question
I am just getting started with SSCE and have been reading the MSDN
documentation.

It suggests the best way to create a database is using ADOXCE. I am looking
at a sample app and this is indeed how MS are doing it themselves.

So the question is this, if I create one through this method, do I then have
a single file which can be deployed with an application, or does a new user
always have to create a database before they can use it?

 Beginner question

You can create the database once, and distribute as often as needed. It is
not unique to a specific device\application. You can create a cabfile that
has your application as well as a ready to go database.

 Beginner question
The easy way is to replicate (using RDA) the tables that you want and you
can modify the constructing of your own tables. Lets say that you have a
very complex structure on the sql server and don't want it on the device.
Use Sql to  gather the data that you want and woops there you go a complete
database to use.

I use stored procedures on the server to get the data I wan't so I never
have to update the code on the device. Just change the stored proc.
