 Altering screen resolution on Mac
Is there a simple way of altering screen resolution from within FMP for use
on a Mac only? Does one need to use an Applescript?

Yep. Sorry, I can't remember the specifics, but it can be done.

It can't be done from FileMaker itself.

You'll need either a plug-in (if one exists) or an AppleScript
(something I try EXTREMELY hard to avoid!) to be able to do that.

Sorry I should have been more specific, yes it can be done in
AppleScript.

necessary for one software package to determine the resolution for all

Kiosk mode solutions is about all I can think of, then you'd know the
screen was set correctly for your layout designs so they don't appear
in one tiny corner of the screen - other than that it really should be
the users choice.

The only way to achieve this would be via an AppleScript or possibly a
FileMaker plug-in (if one exists).

When the solution requires a certain resolution to be able to display
the data required to perform the task.

Yes, the user can set all kinds of things on his computer. That doesn't
mean he will set things in a way that makes sense. The guy was looking
for a way to set the resolution of a monitor, not a lecture on the pros
and cons of user empowerment.
