OK, first things first, I'm using Filemaker Pro 4.0 on a Mac.

I'm administering (?) a database that is used to send out letters.
Each different standard letter has a different layout and a print
script is used. The script goes to the correct layout by looking at
the letter name and brings up the print dialogue.

There is also a list view and I want a script that goes to the first
record, brings up the print dialogue and prints all the letters using
those settings (i.e. paper tray (which is variable), current record
etc...) but really can't get it to work. I really can't work out what
the print record script step does when you set it without dialogue. It
doesn't seem to be the same as sort / find etc. where they use the
settings used last time before script is created. I have had it so
that the first letter is printed correctly and then the rest all print
out a listing of field definitions. Which was a bit weird.

Any clarification on the print record script step much appreciated.

Actually it does remember its settings just like the sort and find etc.
It will remember if you've told it to print the found set, or current
record, or the field defs... or whatever. (ie any of the fm related print
settings)

However, printer specific settings are more flakey (e.g. paper tray) and
often don't remember "well", or at all... particularly when different
workstations are using slightly different drivers (or different printers),
or in x-platform deployments.

Make sure you use the page setup step in conjunction with the print step for
best results.
